Squash Soup Recipes


1 12-oz package frozen winter squash
1 cup reduced sodium chicken broth
1 tablespoon fresh or freeze-dried snipped chives
1 teaspoon snipped fresh thyme or ¼ teaspoon dried crushed thyme
1/4 teaspoon pepper
1/2 cup pear or apricot nectar
(optional) plain yogurt and ground nutmeg to dollop on top


1. In a medium saucepan, combine frozen squash, chicken broth, chives, thyme and pepper.

2. Bring to a boil, then reduce heat.

3. Cover and simmer for 8-10 minutes or until smooth, stirring occasionally.

4. Stir in the nectar and heat through.

5. Serve in soup bowls. Optionally, top with a dollop of plain yogurt and dusting of ground nutmeg.
