Peppers with shrimp salad recipes

Peppers with shrimp salad

4    large green peppers
2    cups cooked medium shrimp
1    tbsp. lemon juice
2    tbsp. chopped green pepper
2    tbsp. chopped red pepper or pimiento
1/2  cup chopped celery
4    thin lemon slices
1/4  cup fine chopped onion
1    tbsp. chopped fresh cilantro
1/2  tsp. salt
1/4  tsp. pepper
1/4  cup mayonnaise
1/4  cup sour cream

     At least 2 hours prior to serving, prepare
and chill salad.  First place peppers upright
on cutting board.  Slice down through a stem,
cutting away 1/3 of pepper.  Reserve the  piece
of pepper to chop for the salad.  Remove seeds
and membrane from inside peppers.  Blanch
pepper in 1 inch boiling water 4 minutes.
Immediately plunge them into ice water,
drain well.  Meanwhile, toss together shrimp,
lemon juice, green pepper, red pepper, celery,
onion, cilantro, salt and pepper.  Mix together
the mayonnaise and sour cream.  Add to the
shrimp mixture, blend well.  Chill shrimp
salad and peppers until serving time.  To
serve, stuff peppers shells with shrimp
mixture, garnish with a lemon slice.  Serves 4.
