Colcannon with sausage recipes

Colcannon with sausage

6    servings of instant mashed potatoes
1/2  tsp. salt
1    cup sliced green onions
1/4  tsp. pepper
4    cups shredded cabbage
1    lb. smoked sausages
1    tbsp. butter
     water

     Heat 1/2 inch water to boiling.  Add the
shredded cabbage and salt.  Cover and cook
for 8 minutes.  Drain.  Meanwhile, brown
the smoked sausages and prepare the mashed
potatoes according to package directions,
adding 1 cup sliced green onions to the liquid.
Fold the cabbage into the potatoes and add
the butter and pepper.  Top with the
browned sausages and serve.  Serves 4.
