Cheesy Stuffed Potato Recipes

Potatoes originated in the Andean mountain region of South America.  Researchers estimate that potatoes have been cultivated by the Indians living in those areas for between 4,000 and 7,000 years.  Unlike many other foods, potatoes were able to be grown at the high altitudes typical of that area and therefore became a staple food for these hardy people.  The Spanish conquerors took samples home to Europe, and the potato was introduced into Western culture.  Sorry Dr. Atkins, but today, who doesn't like a good spud?

1 large potato ; baked
1/2 cup low fat plain yogurt
Freshly ground pepper ; to taste
1 cup steamed vegetables ; broccoli and red bell pepper coarsely chopped
1/4 cup sharp Cheddar cheese ; grated

Preheat oven to 425 degrees F.

Slice baked potato lengthwise. Carefully scoop out potato, leaving about 1/4" of pulp inside the shell. Mash the potato in a medium mixing bowl.

Mix in the yogurt, black pepper, and cooked vegetables. Place potato shells on baking sheet. Spoon mixture back into potato shells.

Top with Cheddar cheese. Bake for 10 - 15 minutes.
