Sweet Sausage Fusilli Recipes

Yield: 24 (10 oz.) Servings

INGREDIENTS

Extra virgin olive oil 3⁄4 cup
Sweet Italian poultry sausage, sliced 4 1⁄2 lbs.
into 1⁄2-inch thick halfmoons
Chopped oregano 3 Tbsp.
Kosher salt 1 Tbsp.
Red pepper flakes (optional) 1 1⁄2 tsp.
Broccoli florets, blanched 3 lbs. 1 1⁄2 gals.
California Ripe Olives, whole, pitted 1 1⁄2 qts.
Cooked fusilli pasta 7 1⁄2 lbs. 1 1⁄2 gals.
Shaved parmesan cheese 3 oz. 1 1⁄2 cups

DIRECTIONS

1. Heat 1⁄3 cup olive oil in a large rondo over medium-high heat.
Stir in sausage, season with oregano, salt and pepper flakes
and cook for 3-5 minutes until browned.
2. Mix in broccoli, California Ripe Olives and pasta and cook
until heated through. Toss with remaining olive oil and top
with parmesan cheese just before serving.
