Sea foam candy

3    cups brown sugar
1    cup water
1    tbsp. vinegar
2    egg whites
1    tsp. vanilla
1    cup chopped nuts, very fine

     Mix sugar, water and vinegar together in
a saucepan and boil it until it reaches a hard
ball stage or 260 degrees on candy thermometer.
Remove from heat and pour very slowly over
the stiffly beaten egg whites, beating
continuosly on high speed of mixer until the
mixture stiffens.  Add vanilla and nut meats
and continue beating until creamy and stiffy.
Quickly drop by teaspoonsful on greased or
wax paper covered cookie sheet.  Keep candy
in container with a lid to keep it from drying
out and getting hard.
