Ingredients. SERVES 8

50g desiccated coconut

200g plain flour

2 tbsp self-raising flour

200g butter

200g caster sugar

2 eggs

milk to taste

2 strawberries, diced, to garnish


1.Preheat oven at 190 centigrade.

2. Sift plain and self-raising flour into a bowl. Put butter and sugar into  another

    large bowl. Beat until soft and fluffy white.

3. Beat the eggs, stir it into the butter-sugar mixture bit by bit. Sift the flour mixture.

    Add desiccated coconut, stir well to make dough. Add milk if the dough is too thick.

4. Put the cake paper-cups into the baking tray. Pour the butter into each cup. Smoothen

    the surface with a knife. Bake 15-20 minutes until golden. Cool on tray. Carnish with

    diced strawberry. Serve.
