Basic Balti Recipes

Contains meat or fish and/or vegetables,this dish is a meal in itself.

Ingredients.SERVES 4

3 tbsp oil
4 green cardamom pods
2 tsp cumin seeds
2 onions, sliced
2 cloves garlic, crushed
4 chicken breasts/ prawns or selection of vegetables
1 tsp chilli powder
1 tsp garam masala
6 tbsp water
10 tomatoes, chopped coarsely
2 tbsp chopped coriander
Sea salt to taste


1. Heat the oil in a pre heated wok, add the cardamom pods and cumin seeds and fry until soft.

2. Stir in the onions and garlic and fry until golden brown. Add the chicken/prawns or vegetables
    and stir fry for 5-6 minutes.

3. Stir in the chilli powder, garam masala, water and tomatoes.

4. Bring to the boil, then turn the heat down and simmer for 20-25 minutes or until cooked. Add
     salt to taste.

5. Stir in the coriander and serve.
