Making Coffee Glaze Icing

How to make easy cookie fillings and icings?

Below is the method for your reference.

1.Lemon Cream



150g icing sugar

40g butter

1/2 tbsp lemon juice

zest of 1/2 lemon, finely grated


Mix icing sugar and soft butter till well blended.Then ad the lemon juice and zest. Mit till well blended.

Tips: For a coffee flavoured variation, mix 1 tsp of instant coffee powder with 1 tbsp of water and use this in place of lemon juice and zest.

2. Cream Cheese



500g cream cheese

125g butter

300g icing sugar

1 tbsp lemon juice

zest of 1 lemon,finely grated


Cream butter and cream cheese till well blended. Then add in the rest of the ingredients. Cream till light and smooth.

3. Ganache


200g chocolate

160g butter


Melt the chocolate over double boiler. Then add in the soft butter. Mix till well blended. Set aside to cool and let thicken.

4. Royal icing



180g icing sugar

1 egg white


Mix icing sugar and egg white till smooth and spreading consistency. If you need a softer icing, add extra egg white. If you need a stiffer icing, add extra icing sugar.

5. Glaze icing



120g icing sugar

1 1/2 tbsps water


For orange glaze icing, add zest(finely grated) of 1orange and 1 1/2 tbsps of orange juice.

For coffee glaze icing, add the mixture of 1 tsp of instant coffee powder and 1 1/2 tbsps of water.


If the glzae is too thick, add extra liquid to dilute it. If it is too watery, add extra icing sugar.
