Fairly simple and fun recipes

Source:  Editor:  Read:

I need suggestions on what to cook with/for my boyfriend this weekend?

Tempura-ing food is always fun.

the batter is really simple
one medium bowl of cold water with about 6 ice cubes
one egg yolk
and tempura flour, or you can use all purpose flour.

stir the egg yolk and water together, and then add flour and roughly mix until the batter just coats the back of a spoon.

you can tempura anything like shrimp, bacon wrapped cheese, mushrooms, eggplant, peppers, onions, fish, sweet potatoes, tofu, cooked carrots, scallions, cooked pumpkin, crab, oysters, celery, and whatever else.
How about Shiskabobs? Using beef, chicken or shrimp, adding just about any kind of veggies to BBQ, like pearl onions, artichoke hearts, potato slices, pineapple and lots more, using teriyaki sauce is good too.
Well i'm pretty good at nice dinners.

If you have a grill I'd recomend Steak and baked potato with broccoli and cheese

A few weeks ago I made shrimp scampi, crab cakes, and crab legs melted in butter, with rollls

And 3 nights ago I made Cordon Bleu (homemade), with mararoni mixed with velveeta cheese and milk.. with some mixed vegetables such as carrots, broccoli, and cauliflower...

Hope this helps.. recipes can be found online
Chicken Wrapped in Bacon Salad

Take boneless skinless chicken breasts and cut slits in them and add sliced garlic (omit if you don't like garlic and add plenty if you do) season with salt and pepper and take thick cut bacon and completely wrap with bacon so there is no visible chicken showing usually three pieces do then on a baking wrack inside a pan set them on (so they sit out of the grease) and throw in oven at 400 degrees for around an hour and when the bacon is really crispy and you stick a knife in them and the juice comes out clear they are done let sit for about 20 min, cut into bite size pieces and toss with some lettuce, broccoli, cauliflower, grape tomatoes sliced in half and some vinaigrette dressing

for desert have a you sundae
Well, it depends whether you want something fast and simple or something for dinner.
For the simple recipe, I have a favorite recipe that's very fast: Cut slices of toast in half so each one forms 2 triangles. Then add tomato slices, hotdogs (or sliced anchovies or anchovie paste), bell pepper slices and garlic powder. Top with mozzarella cheese or slices of sharp cheddar and pop in the oven for ten minutes until the cheese melts. Enjoy!!

For a more dinner-like recipe, I make a hotdog fajita that my husband really loves. Put two tablespoons of vegetable oil in a skillet, then add one chopped onion and stir until golden. Add bell pepper slices, 4 sliced hotdogs, one tablespoon ketchup and salt and pepper to taste. this is ready in about 15 minutes on medium heat, when the bell pepper is tender.

You can either make sandwiches or for more variation you can put this mixture in spring rolls and fry them, or an easier solution is to add it to pasta sauce and serve on top of pasta. yum!
Rigatoni with Italian Chicken [6 serv; ready in 45min]

6 skinless, boneless chicken breast halves
2 cups Italian salad dressing
1 (16 ounce) package uncooked rigatoni pasta
1 (28 ounce) can diced tomatoes with Italian herbs
1/4 cup butter
1/4 teaspoon crushed red pepper flakes
1 cup grated Parmesan cheese
1 tablespoon dried parsley

Place chicken breasts in a large resealable plastic bag, and pour in the Italian dressing. Seal bag, and marinate chicken 30 minutes in the refrigerator. Drain, discarding dressing, and dice.
Bring a large pot of lightly salted water to a boil. Add rigatoni and cook for 8 to 10 minutes or until al dente. Drain, transfer to a large bowl, and toss with diced tomatoes.
Melt butter in a skillet over medium heat. Place chicken in the skillet, and season with red pepper. Cook and stir 15 minutes, or until chicken juices run clear. Serve over the pasta. Top with Parmesan cheese, and garnish with parsley flakes.
