Rocky Road Cookie Recipes

It's kind of Bar Cookies. The texture is moister than cookies and denser than cakes. Cookies are baked in shallow pan, with or without sweet pastry. You can add chocolate bits,nuts,desiccated coconut,dried fruit,fresh fruit for even canned fruit. After baked and cooled completely, top with icing sugar or ganache and cut into square or rectangular,big or small pieces.

 

Ingredients

Sweet Pastry:

(A) 80g butter, 80g sugar

(B) 50g eggs

(C) 170g flour, 1 tbsp cocoa powder, 1/4 tsp baking soda

(D) 80g chopped walnuts

Topping:

150g marshmallows, 75g chocolate chips

Directions

Pastry:

1.Cream (A) lightly. Add in (B) and cream till smooth. Then add in sieved (C) and then mix till well blended.

2.Press the pastry into a 25cm square mould lined with foil and sprinkle (D) on top of the pastry. Press it lightly.

3.Bake at 180 degree for 25-30 minutes.

Topping:

1.Cut the marshmallows into small pieces and sprinkle it evenly into the baked pastry.

2.Sprinkle the chocolate chips over marshmallows and return the mould to the oven. Bake at 180 degree for 25~30 minutes.

3.Let is cool. Remove it from the mould and cut into pieces.

Tips

To add some colours to this chocolaty classic, sprinkle finely chopped red and green glazed cherries on top after the pastry is baked.
