Pecan Slices Recipes

It's kind of Bar Cookies. The texture is moister than cookies and denser than cakes. Cookies are baked in shallow pan, with or without sweet pastry. You can add chocolate bits,nuts,desiccated coconut,dried fruit,fresh fruit for even canned fruit. After baked and cooled completely, top with icing sugar or ganache and cut into square or rectangular,big or small pieces.

 

Ingredients

Sweet Pastry:

(A) 200g butter, 100g sugar

(B) 1 egg

(C) 330g flour, 10g milk powder

Filling:

(A)3 eggs, 60g sugar, 240g golden syrup, 40g melted butter

(B) 50g flour, 250g chopped pecans

Directions

Sweet Pastry:

1.Mix (A) till well blended. Then add in (B) and cream till smooth.

2.Add in (C) and mix till well incorporated. Refrigerate the mixture for 30 minutes until firm.

3.Remove the mixture from the fridge and knead it lightly till smooth.

4.Roll it between 2 sheets of plastic to 3mm in thikcnes. Line it into the greased 31cm X 22cm Swiss Roll pan with the rolled-out pastry.

Filling:

1.Mix (A) till sugar dissolves, add in (B) and mix till well blended. Pour it into the pan lined with sweet pastry.

2.Bake at 190 degree for 30-35 minutes. Bake at lower rack of the oven.

3.Unmould it and let it cool. Then cut it into slices.

Tips

Pecans can be replaced with walnuts.
