Hazelnut Jam Rings Recipes

It's kind of mould-cut cookies. A firmer dough is rooled between two plastic warps into a thin dough.Then cut it with cookie cutters into the desired shape (the dough sometimes needs to be refrigerated).After baked and cooled, it can be decorated with glaze or royal icing which can be tinted with desired food colouring.

 

Ingredients

Sweet Pastry:

*Refer to method for making Sweet Pastry

Topping:

200g ground hazelnuts, 150g sugar, 2 egg whites, some strawberry jam or apricot jam

Directions

1.Roll out the sweet pastry between two sheets of plastic to a 3mm thickness. Then cut it with about 4cm round cutter and place it into the greased pan.

2.Mix all the ingredients of the topping till well blended.

3.Place it into the piping bag fitted with star nozzle. Pipe it around the edge of the sweet pastry.

4.Bake at 175 degree for 20 minutes or till become brown.

5.Let it cool and then pipe the strawberry jam or apricot jam at the centre.

Tips

The centre can be filled with melted chocolate or leave it empty.
