Florentines Recipes

It's a kind of drop cookies.This is the easiest way of making cookies by using two spoons to drop the soft dough onto the prepared tray.Press the dough with a wet fork if it is a little too stiff. Leave space between dough to allow for spreading.



(A) 20g butter, 50g sugar, 1 tsp honey, 40g whipping cream

(B) 40g flaked almonds, 30g nibbed almonds, 20g chopped red glace cherries, 20g mixed peels, 10g flour

(C) some chocolate


1.Cook (A) till it boils and continue to cook for 2 minutes.

2.Add in (B) and mix till well blended let it cool for 10 minutes.

3.Drop a heaped tablespoonful of batter into the baking paper.Flatten to 5 cm rounds, leaving about 5cm between them. Make 6 pieces per tray for easy handling.

4.Bake at 175 degree for 10 minutes or until lightly brown. Remove tray from oven.

5.Allow it to cool on tray for 2 minutes or until firm, cut it with 7cm round cutter.

6.Place it into oven and bake for 3 more minutes, remove it from oven. Set aside to let it cool.

7. Spread melted chocolate on the underside use icing comb to make wavy pattern.

8.Place the florentines chocolatet side up on wire rack to set. (Refer to method for shaping florentines)


To make the wavy pattern more obvious, wait till the chocolate turns thick before combing.
