Chocolate Almond Bars Recipes

It's kind of mould-cut cookies. A firmer dough is rooled between two plastic warps into a thin dough.Then cut it with cookie cutters into the desired shape (the dough sometimes needs to be refrigerated).After baked and cooled, it can be decorated with glaze or royal icing which can be tinted with desired food colouring.

 

Ingredients

(A) 250g butter, 190g icing sugar, pinch of salt

(B) 1 egg

(C) 380g flour, 90g ground almonds

(D) some chocolate

Directions

1.Cream (A) lightly. Then add in (B) and cream till smooth.

2.Add in the sieved (C) and mix till well blended.

3.Refrigerate for 30 minutes or till firm.

4.Roll out the dough in between sheets of greaseproof paper to a 3mm thickness.

5.Cut it into 5cm X 2.5cm pieces and place it into the baking paper.

6.Bake at 175 degree for 15~20 minutes or till golden brown and become cookies.

7.Let it cool, sandwich 2 pieces together with melted chocolate.

8.Coat with melted chocolate and place on greaseproof paper. Then pipe some melted white chocolate lining on top.

9.Refrigerate for 2 minutes to let it set.

Tips

If the dough is too soft to cut, put it back to the fridge and refrigerate for another 15~20 minutes to let it become firmer.
