Biscotti Recipes

It's kind of Moulded & Shaped cookie. Te cookie dough is stiffer which can be moulded or shaped into balls, crescent or pretzel. Some dough needs to be refrigerated some does not. A wet fork can be used to press on the cookie dough to make pattern to the cookies. You can top the cookie with chopped nuts, sesame seeds, desiccated coconut, cornflakes and etc. to make the cookies look more apptetizing.

 

Ingredients

Dough (I)

(A) 100g Flour, 1/2 tsp Baking powder, 1/4 tsp Baking soda, 65g Sugar,

      1/8 tsp Salt, 1/2 tbsps Cocoa powder, 1/4 tsp Cinnamon powder

(B) 2 tsps Cooking oil, 1 Egg

(C) 70g Whole shelled almonds, 20g Glace ginger, chopped

Dough (II)

(A) 120g Flour, 1 tsp Baking powder, 65g Sugar, 1/8 tsp Salt, 1/4 tsp Cinnamon powder

(B) 2 tsps Cooking oil, 1 Egg

(C) 70g Whole shelled almonds, 20g Glace ginger, chopped

Directions

Dough (I) and Dough (II)

1.Mix (A) till well blended.

2.Add in (B) and mix till well combined.

3.Add in (C) and mix till well incorporated. Repeat step (1) to (3) for Dough (II).

4.Mix the plain dough and chocolate dough together roughly, shape it into a log shape.

5.Bake at 190 degree for 20~25 minutes.

6.Remove from oven and cut the loaf diagonally into thin slices about 1cm thick.

7.Bake it again in a cool oven at 120 degree for 20 minutes.

Tips

Oil can be replaced with soft butter or margarine. Almonds can be substitutedwith other nuts as desired.
