Almond Coffee Macaroons Recipes

It's kind of  piped cookies. The cookie dough is squeezed through a soft pipe with star or plain nozzle into different shapes and patterns. Or simply press the dough using a cookie press. Normally the dough is creamed till light and fluffy but over-creaming loses the ridge and trough pattern due to expansion.



(A) 85g ground almonds, 125g sugar, 1 tbsp rice flour

(B) 1 egg white

(C) 1 tsp instant coffee, 2 tsps wate, some coffee cream(*Refer to method for making coffee cream)


1.Mix (A) till well blended. Then add in (B) and mix till well combined. Lastly add in (C) and mix till well incorporated.

2.Place it into the piping bag fitted with plain nozzle.Pipe it into tray lined with baking paper.

3.Bake at 170 degree for 15~20 minutes or till golden brown.

4.When the cookies have cooled, sandwich coffee cream in between two cookies. Serve.


Ground almond can be replaced with ground hazelnuts or use mixture of ground almonds and ground hazelnuts.
