Eggplant and Ground Pork Recipes



1/2 t. salt
1/2 t. sugar
1/2 t. vinegar
1/2 t. cornstarch
3 t. water
3 c. vegetable oil
(2) 2/3 Ib. (300g.) eggplant
(3) 1-3/4 oz.(50g.) ground pork
(4) 2 T. garlic (minced)
(5) 1/2c. fresh basil leaves

Cut eggplant into 2.5'' sections. Cut each section into 4 long strips.

Heat oil. Put eggplant into heated oil for 2 minutes until soft. Remove eggplant. Stir-fry ground pork in 1 T remaining oil. Add 2 T minced garlic and stir-fry utill fragent. Add eggplant, fresh basil leaves and (1), and stir-fry till well mixed.

Now it's ready to serve. Enjoy your dish!
