ZA??TAR Roasted Chicken Recipes

Boneless chicken breasts 9 lbs. 24 (6 oz.)
Za’tar seasoning* 1⁄2 cup
Olive oil 1⁄3 cup
Red onions, wedged into 3 lbs. 3 qts.
1-inch thick slices
Carrots, peeled and cut into 3 3⁄4 lbs. 3 qts.
3⁄4-inch chunks
California Ripe Olives, whole, pitted 1 1⁄2 lbs. 1 1⁄2 qts.


1. Season chicken breasts on both sides with 1⁄2 cup of za’tar.
Set aside.
2. Heat oil in a large ovenproof skillet over medium-high heat.
Place chicken breasts skin side down in the skillet and brown
for 2-3 minutes on each side, then transfer to a clean sheet
pan and set aside. Stir onions and carrots into pan and cook
for 3-4 minutes over medium-high heat until lightly browned.
Mix in California Ripe Olives and remaining za’tar, pour into
a hotel pan and top with chicken breasts.
3. Place hotel pan into a 400°F oven and roast for 15-18
minutes until chicken is cooked through and vegetables are
tender. Serve hot or room temperature.
* Za’tar is a Mediterranean seasoning mix that can be purchased on-line
at You may make your own by combining 2
teaspoons of dried thyme, 2 teaspoons of dried oregano, 2 teaspoons
of toasted sesame seeds and 1⁄2 teaspoon of kosher salt.
