Geri's Quick Chicken Cassrole Recipes

This 15 minute low carb microwave one potter is not only fast but pretty tasty.

3 cups Egg noodles ; - uncooked
1 tablespoon Butter
1/4 cup Onion ; - chopped
1/2 cup Celery ; - chopped
1 each Chicken Breast ; - 13oz. can
1/2 cup Mayonnaise
1/4 cup Potato chips ; - crushed
1 can Cream of mushroom soup

-= Instructions =-
Cook pasta noodles as per directions on package.

Meanwhile place butter, onion and celery in 3-qt. glass covered casserole.  Microwave about 3 minutes on HIGH, or until partly cooked.

Drain and flake chicken. Stir in remaining ingredients (except potato chips).  Microwave about 8 minutes on medium high setting (70% - 80%) or until heated through (about 150F).  Let stand covered for 5 minutes. Sprinkle top with crushed potato chips before serving.

NOTE: You may substitute tuna, turkey, chopped ham, pork, beef or any other meat for a different taste.
