Two pepper crustless quiche

Two pepper crustless quiche

125 calories, 12 grams protein, 5 grams
carbohydrate, 6 grams fat in 1 serving.

1    16 oz. container cottage cheese
7    whole eggs
3    egg whites
1/2  cup skim milk
1    med. sweet green pepper, chopped
1    tsp. baking powder
1/4  cup flour
1/4  tsp. salt
3 1/2 oz. jalapeno jack cheese, shredded
1    med. sweet red pepper, chopped

     Place cottage cheese in electric blender.
Cover and whirl until smooth.  Transfer
to large bowl.  Combine whole eggs, egg
whites and skim milk in blender.  Cover and
whirl until fluffy.  Add flour, baking powder
and salt and whirl until smooth.  Stir egg
mixture into cottage cheese in large bowl and
blend well.  Add the jack cheese and both
green and red peppers.  Pour mixture into
13x9x2 inch metal baking pan and bake for 15
minutes at 400 degrees then reduce heat to 350
degrees and bake 10-15 minutes or until set
and top is lightly browned.
