Sour Cream Frosting

INGREDIENTS:

1/4 cup butter
1/2 cup sour cream
1 teaspoon vanilla
1/4 teaspoon salt
2 1/2 to 2 3/4 cups sifted confectioners' sugar

PREPARATION:
Melt butter in top of double boiler over hot water. Remove from hot water; stir in sour cream, vanilla, and salt. Slowly beat in confectioners' sugar until desired spreading consistency is reached.

Mom's Homemade Red Velvet Cake Recipe
* 2 1/2 C. all-purpose flour
* 1 1/2 C. sugar
* 2 tsp. cocoa
* 1 tsp. baking soda
* 1 tsp. salt
* 2 eggs
* 1/2 C. oil
* 1 C. buttermilk
* 2 oz. (1/4 C.) red food coloring
* 1 tsp. vanilla

PREPARATION:
Place all dry ingredients in bowl. Blend eggs with fork. Add oil and blend again. Add this mixture to dry ingredients and mix with wire whip until smooth. Add and blend buttermilk. Pour equally into three greased and floured 8" cake pans.Bake at 350? for 30 minutes. Cool ten minutes and remove from pans. Frost cake when completely cooled.

Icing

Mix together until light and fluffy:

1/2 stick butter
8 oz. cream cheese
1 lb. box of powdered sugar
dash of salt
1/2 tsp. vanilla
1 C. chopped nuts
