Sorghum molasses cookies

3/4  cup shortening
1    cup sugar
2    eggs, well beaten
1    cup molasses
4    cups flour
1    tsp. salt
1    tsp.  soda
2    tsp. cinnamon
1    tsp. ginger
3/4  cup cold coffee

     Cream shortening and sugar.  Add eggs,
molasses and beat well.  Sift all dry ingredients
together then add to creamed mixture
alternately with coffee.  Drop by spoonfuls
onto a greased cookie sheet.  Bake in 350 degree
oven for about 15 minutes.  Move to rack to cool.

Note...if desired, when cool, these can be iced
with a plain frosting.
