Dotty Swiss' Fruity Muffin Recipes

Makes 12 servings


    1 1/2 cups flour                                               
    1/2 cup sugar                                                  
    1 1/2 teaspoons baking powder                                  
    1/2 teaspoon salt                                              
    1 cup raisins chopped dates, chopped mixed dried fruit or a    
    1/2 cup milk                                                   
    2 eggs                                                         
    1/4 cup vegetable oil                                          

Turn on the oven to 400? Line twelve muffin-pan cups with paper baking cups or grease with shortening. In a medium bowl, stir together flour, sugar, baking powder and salt with a wooden spoon.

Add fruit and stir until evenly mixed.

In a small bowl, beat milk, eggs and oil with a fork until well mixed. Add to fruit mixture and stir until all the flour is moistened. Spoon the batter into the baking cups, filling them a little more than half full. Bake for 18 to 20 minutes or until golden. Cool the pan on a wire rack for 10 minutes. Carefuly remove the muffins and serve hot.
