Recipes for Fluffy Beef-mac

Fluffy beef-mac

1/2  cup chopped onion
1/3  cup butter
1    cup flour
1    tsp. salt
1/2  tsp. dry mustard
1/4  tsp. pepper
2    cups milk
1/4  tsp. cream of tartar
2    cups shredded cheddar cheese
3    eggs, separated
1    7 oz. pkg. elbow macaroni,
     cooked and drained
1    3 1/2 oz. jar dried beef
1/2  cup chopped green pepper
2    tbsp. chopped pimiento

     Saute onion in butter until tender but not
brown.  Blend in flour, salt, mustard and
pepper.  Stir in milk.  Cook slowly, stirring
constantly until sauce is thick and smooth.
Add cheese and stir until melted.  Beat egg
yolks, slightly stir in small amount of sauce
and then stir into remaining sauce mixture.
Fold in macaroni, beef, green pepper and
pimiento.  Beat egg whites and cream of tartar
until stiff but not dry.  Gently fold into
macaroni mixture.  Pour into an ungreased 2
quart casserole and bake in 325 degree oven
for 50-60 minutes or until set.  Serves 6-8.
