Sweetbreads are wonderful!!! My grandmother used to make them for me for my birthday. She would remove all the cords/attachments from them, dip the raw sweetbreads into boiling water just to blanch them, and then remove them and place immediately in cold water. I don't remember if she removed the cords before or after blanching. She would then flour the sweetbreads and fry in a little butter, add beef broth - a little - and a little wine and saute them until the broth and wine were concentrated. It was very very good. I haven't had them in a restaurant as good as she could make them.
So, braise them and you'll really enjoy them. But remember to take off everything but the edible part. It does something to the flavor if you don't remove it all. She also made the most wonderful steak and kidney pie.
